Having founded London-based stationary and design studio BerinMade at the age of 25, Erin Hung has made a career out of sharing her imaginative DIY creations with the world. To help with your own preparations for Valentine’s Day, Erin has shared a thirst-quenching recipe for the Honey Bee Cocktail, which can be spruced up with these DIY Bee’s Knee’s Cocktail Stirrers.

I’m a huge Valentine’s Day person, a fact to which my husband might begrudgingly attest to. Every year, I become a shameless arrow-wielding cupid, planning elaborate schemes, making pop-up cards and generally kicking up a huge, unrelenting fuss over this Hallmark holiday, rendering him exhausted from my antics.

This year, in my third-trimester fatigue and very sad period of abstinence from alcohol, I mercifully decided to give him a break. So, I asked my good friend Amanda Wan (who has the enviable job of developing beverages for notable bars like The Envoy, Quinary and Ori-Gin) for some Galentine’s Day cocktail recipe ideas. Being the cocktail genius that she is, she sure did not disappoint!

There’s so much to love about this Honey Bee cocktail recipe. First of all, it’s got just the balance of sweetness and tang so that it’s not sugary, but keeps you coming back for more. It’s also intended to be spiritfree, which makes my 35-weeks pregnant self brim with joy! Of course, you can add a buzz (pun intended!) with a shot of gin. I loved it so much, I even made origami bee stirrers to go with them.

Honey Bee Spiritfree Cocktail

Ingredients:

45ml Homemade honey thyme syrup*
20ml Elderflower cordial
20ml Yuzu juice

Method:

  • Combine ingredients in glass.
  • Top up soda water and stir well.
  • Garnish with grapefruit/orange slices, thyme/sage sprigs and dried rosebuds.
  • Serve with honey bee stirrer and paper straw!
*Homemade Honey Thyme Syrup

Ingredients:

20g Thyme
500ml Water
500g Fine white sugar

Method:

  • Bring pot of water to boil, add in thyme and sugar. Stir until dissolved.
  • Leave to cool before adding equal parts thyme syrup to rich honey.
  • Bottle up, label and store for later use.

Honey Bee is a spiritfree cocktail available at The Envoy, 3/F, The Pottinger Hotel, 74 Queen’s Road, between February 13 & 14 as a Valentine’s Day promotion.
