Chili Truffles

Makes 30 truffles approx
Prep and cook time: 45 min

Ingredients:

200 g dark chocolate
70% cocoa solids, chopped
100 g crème fraîche
3 cl rum
15 g butter
1 – 2 red chillies, depending on desired heat
finely chopped
 cayenne pepper
dark cocoa powder, for coating

Method:
Put the chocolate and crème fraîche in a bowl over hot water and melt. Remove from the heat and add the rum, butter and chopped chilli. Thoroughly mix together and chill until the mixture holds its shape well.
